Storytime: Chilaquiles

One of the reasons I miss California.  If you're not familiar ,Chilaquiles are like breakfast nachos, but not those crispy ones on the top of the nacho pile, but the ones on the bottom that have absorbs the salsa, cheese, sour cream and in this case some lovely scrambled eggs cooked right in.  Any taco truck that has chilaquiles on the menu is a taco truck you want to be at, all of there food is assured to be excellent.
